For eight days (seven in Israel) we avoid eating chametz, leavened bread, instead eating only matza which marks both the bread of affliction which our ancestors ate when slaves to Pharoah in Egypt and the bread which didn’t have time to rise as we left in a hurry during the exodus from Egypt.
